Ingredients

For 4 persons
  • 12 adductor muscles of scallops (for Sashimi)
  • 2 tablespoons each flour and Pure Sesame Oil
  • 1/2 shallot (small size)
  • 1/3 cup white wine
  • 2 tablespoons marmalade

Seasoning

  • Appropriate amounts of salt, pepper, chili pepper (cayenne pepper) and paprika powder

Directions

  1. Sprinkle the seasoning ingredients over the scallop adductor muscles and coat them with flour, dusting off any excess.

  2. Heat Pure Sesame Oil in a pan, saute both sides of the adductor muscles from (1), remove and keep the heat.

  3. Put minced shallots in the pan from (2) into the juice of the sauteed adductor muscles, and saute the shallots until wilted.

  4. Add white wine to the mixture from (3), boil down slightly, add marmalade and boil down slightly again.

  5. Add salt and pepper to the mixture from (4) to taste.

  6. Arrange the adductor muscles of scallops sauteed in (2) on a serving dish and put the sauce from (5) on top.

Tips:
The sweetness and slight bitter taste of marmalade go with various ingredients. Why not try some of your own?
