For 8 cuts (20 x 15 mold x 1)

  • 2 egg whites
  • 55g sugar
  • 50 g flour
  • 20 g ground gold sesame seeds
  • 70 g Kadoya roasted sesame oil
  • Whipped cream, as desired
  • 1 persimmon
  • Italian parsley to taste
  • Sesame oil and ground golden sesame seeds to taste
  • Put the egg whites in a bowl, add the white sugar and whisk to mix.
  • Sift in flour and mix.
  • Add the ground gold sesame seeds and mix.
  • Add sesame oil and mix.
  • Cover the bowl of (4) with plastic wrap and let the dough rest for 30 minutes. Preheat oven to 170℃.
  • Pour the dough from (5) into a baking pan and bake in the oven at 170℃ for 25 minutes. Remove and let cool in the mold.
  • When cool, cut into 8 equal pieces and top with whipped cream and persimmons cut into desired shape. Garnish with Italian parsley if desired, drizzle with sesame oil, and sprinkle with golden sesame seeds.
