Ingredients (2 servings)
| 【Sesame-Crusted Tuna】 | |
|---|---|
| sushi-grade ahi tuna | 225 g |
| white sesame seeds | 18 g |
| black sesame seeds | 9 g |
| neutral oil | 15 mL |
| 【Dark Roasted Sesame Sauce】 | |
| Kadoya roasted sesame oil | 5 mL |
| ponzu | 30 mL |
| soy sauce | 15 mL |
| mirin | 10 mL |
| honey | 2.5 mL |
| 【For Serving】 | |
| avocado, diced | 1 |
| Persian cucumber, julienned | ½ |
| green onion, thinly sliced | 6 g |
| microgreens, for garnish | <1 g |
Directions (15 min)
-
Whisk together the ponzu, soy sauce, mirin, Kadoya Roasted Sesame Oil, and honey until well combined. Set aside.
-
Combine the white and black sesame seeds on a plate. Pat the tuna dry, then press it into the sesame seeds, coating all sides.
-
Heat the neutral oil in a skillet over medium-high heat to 350°F (175°C). Add the tuna and sear for 30–45 seconds per side, just until the sesame crust is lightly toasted while the center remains rare.
-
Transfer the tuna to a cutting board and let rest for 2 minutes. Using a sharp knife, cut across the grain into approximately ¼-inch-thick slices (6 mm thick).
-
Arrange the tuna slices on a serving plate with the avocado and cucumber. Pour the prepared sauce over and around the tuna. Finish with green onion and microgreens and serve immediately.
