Directions (15 min)
-
In a medium bowl, whisk together the soy sauce, ponzu, Kadoya Roasted Sesame Oil, and honey. Add the Otoro and gently toss until evenly coated.
-
Place a 3- to 4-inch round ring mold (7.5- to 10-cm) in the center of a serving plate. Add half of the prepared sushi rice and gently press into an even layer.
-
Add the cucumber over the rice, followed by the avocado, gently pressing each layer so the stack holds its shape.
-
Spoon the marinated Otoro over the avocado, reserving any remaining marinade. Gently press to create an even top, then carefully lift off the ring mold.
-
Drizzle the stack with spicy mayo and any reserved marinade. Sprinkle with sesame seeds and green onion. Serve with pickled ginger on the side.
