Baba ganoush (eggplant caviar with sesame)

Ingredients (for 1 bowl *4 servings)
  • Eggplant


  • Kadoya roasted sesame oil

    1 tablespoon

  • Tahini (sesame paste)

    1 tablespoon

  • Lemon juice

    1/2 lemon

  • Chopped parsley

    1 tablespoon

  • Salt and pepper

  • Preheat oven to 180°C fan oven.

  • Place the eggplant in a baking dish and bake for 1 hour. Leave it to cool.

  • Remove the flesh from the eggplant with a teaspoon. Discard the skin.

  • Place eggplant in blender and add lemon juice, tahini, parsley, and sesame oil. Season with salt and pepper.

  • Blend, but not too long to keep the texture a little thick.

  • Set aside in a cool place.
