  • Chicken breast without skin

    140g

  • A pinch of salt

    0.5g

  • Sake

    1 teaspoon (5g)

  • Tomato

    1 (200g)

  • Cucumber

    1 (100g)

  • Leek

    1/4 (25g)

  • [A] Kadoya roasted sesame oil

    2 tablespoons (28g)

  • [A] Miso

    1 tablespoon (18g)

  • [A] Soy sauce

    1 teaspoon (6g)

  • [A] Sugar

    1 teaspoon (3g)

  • [A] Vinegar

    1 teaspoon (5g)

  • Radish sprout

    5g

Directions
  • Place chicken in a heatproof container, sprinkle with salt and sake, cover with plastic wrap, and microwave (600W) for 4 to 5 minutes. Remove from heat and break into pieces by hand along the fibers.

  • Cut tomatoes into 1 cm wide half-moon slices, cucumbers into strips, and leeks into chunks.

  • In a bowl, make sauce by mixing [A] and leeks from (2).

  • On a plate, arrange the tomatoes and cucumbers from (2), and the chicken from (1) in this order, pour the sauce from (3), and garnish with radish sprout.
