Ingredients (for 4 servings)
  • 【For the beef】

  • Light brown sugar, packed

    2 tablespoons (24 g)

  • Reduced sodium soy sauce

    2 tablespoons (30 g)

  • Kadoya roasted sesame oil

    1 teaspoon (4.5 g)

  • Freshly grated ginger

    1 tsp (2 g)

  • Crushed red pepper flakes (or more to taste)

    1/4 teaspoon (0.5 g)

  • Vegetable oil

    2 teaspoons (9 g)

  • Garlic, minced

    2 cloves (6 g)

  • Ground beef

    8 oz (227 g)

  • 【For the Kimchi Topping】

  • Vegetable oil

    1 teaspoon (4.5 g)

  • Kimchi, chopped

    1 cup (150 g)

  • 【For Assembly】

  • Tortilla chips

    12 oz (340 g)

  • Shredded cheddar cheese

    1/2 cup (56 g)

  • shredded Monterey Jack cheese

    1/2 cup (56 g)

  • Sriracha Mayo

    2 tablespoons (30 g)

  • Chopped fresh cilantro leaves

    2 tablespoons (8 g)

  • Sesame seeds

    1/4 teaspoon (1 g)

Directions
  • In a small bowl, whisk together brown sugar, soy sauce, Kadoya roasted sesame oil, ginger, and red pepper flakes.

  • Heat 2 teaspoons vegetable oil in a large skillet over medium-high heat. Add minced garlic and cook, stirring frequently, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3–5 minutes, crumbling as it cooks. Drain excess fat.

  • Stir in the soy sauce mixture and cook for about 2 minutes until the beef is well coated and heated through. Set aside and keep warm.

  • Prepare the Kimchi Topping: Heat 1 tsp vegetable oil in the same skillet. Add chopped kimchi, Kadoya roasted sesame oil, and sugar. Stir and cook for 3–5 minutes until heated through and slightly caramelized. Set aside and keep warm.

  • Assemble the Nachos: Preheat the oven to 400°F. Lightly oil a baking sheet or coat with nonstick spray. Arrange tortilla chips in a single layer on the prepared baking sheet. Top with the cooked beef and shredded cheeses. Bake for 5–6 minutes, or until the cheese is melted and bubbling.

  • Remove nachos from the oven and top with the kimchi mixture. Drizzle with Sriracha mayo and garnish with chopped cilantro and sesame seeds. Enjoy!
