Ingredients (for 4 servings)
  • Firm tofu/tau kwa

    450g

  • Ginger

    10 Slices

  • Cloves garlic, smashed

  • Packed fresh basil leaves (Thai or Sweet)

    1 cup

  • Corn starch for coating

    5 tablespoons

  • Oil for cooking

  • Coriander leaves for garnish

  • 【Sauce】

  • Chinese cooking wine

    4 teaspoons

  • Light soy sauce

    4 tablespoons

  • Kadoya hot sesame oil

    4 tablespoons

  • Sugar

    1 tablespoon

  • Water

    100g

  • White pepper

    Dash

Directions
  • Mix the sauce ingredients in a bowl until well combined and set aside.

  • Pat dry tofu with paper towels and cut into ½ inch thick cubes.

  • Place corn starch in ziplock bag and add tofu. Gently shake to coat tofu cubes with corn starch.

  • Heat oil in shallow pan and pan-fry tofu until golden on both sides.

  • Heat 2 tablespoons of oil in a clean frying pan.

  • Saute ginger slices until the sides starts to crisp then add garlic to cook until fragrant.

  • Pour in the sauce and tofu. Gently toss and allow sauce to reduce.

  • Remove from heat and stir in basil. Serve garnished with coriander leaves.
